This is a quick post for Alicia (LiLi to my girls) who told me, quite eloquently, that she has a buttload (her word, not mine) of produce from her CSA box she needs to use. She’s making salsa with most of it but I thought I’d give her something to do with all those cucumbers.
I don’t have a decent picture of this very pretty salad so I thought I’d share a picture of Jake. I stole this from Alicia’s FB page. He belongs to her and Sean and is my new great-nephew puppy. Isn’t he gorgeous? We love him!

Cucumber Salad with Feta
In a large bowl, whisk together…
1/4 cup lemon juice
1 clove garlic, grated or very finely chopped
1/4 tsp ground oregano (1/2 tsp if using flakes)
1 TB fresh dill, chopped or 1 tsp dried dill
2 TB olive oil
salt & freshly ground pepper, to taste
Add…
@ 4 cups cucumbers, cut lengthwise in half then sliced
1/3 cup sweet onion
1 cup broccoli spears (you may substitute tomatoes, cauliflower, whatever you like)
1/2 cup crumbled feta cheese
