It’s hard to believe the Easters with my “little girls” are now memories. Such happy ones, though, and I’m pulling them out today in picture form. I’m also including some favorite Easter recipe links in case you need some last-minute ideas.

Brunch
Let’s start with brunch. That’s what we are doing this year so we can just eat all day. A spiral glazed ham and Grandma’s Cinnamon Rolls will be on the menu, for sure, but maybe also some of the following breakfast items.
Crustless Spinach and Tomato Quiche
Deviled Eggs with Chipotle and Chives

Smoked Salmon Hash with Lemon Dill Sour Cream
Flax, Citrus, and Berry Muffins

Dinner
Some of our fondest Easter memories involve dinner at my cousin Priscilla and her husband, Mike’s house. They are excellent hosts and cooks! Dinner items vary but always include Grandma’s Rolls. She, somehow, makes them taste exactly like our Grandma Ina’s did. Here are some other Easter dinner favorites…

Roasted Red Pepper and Green Olive Hummus
Spinach, Strawberry, and Goat Cheese Salad
Roasted Asparagus with Lemon Vinaigrette and Feta
Roasted Leg of Lamb with Rosemary Mint Au Jus

Dessert
Friends that become family are the dessert of life. We’ve had many fun celebrations with the same crew over the years and are still all the best of friends.

My niece, Alicia, and I have decided on Lemon Coconut Cake this year, but I might change it up and make cupcakes instead. That way, we can leave the toasted coconut off for E & H. Not that they won’t have plenty of chocolate from the Easter Bunny! They may be past the egg hunt stage, but they’ll never be too old for a See’s chocolate bunny.
Here are some more sweet ideas to finish your brunch or dinner…

Carrot Cupcakes with Lemon Cream Cheese Frosting
Cut-Out Sugar Cookies with Royal Icing (Easter/Spring shapes, of course)

Old-Fashioned Spice Cake with Maple Fudge Frosting

Happy Easter to you and yours! I hope you have sunshine, freedom, flowers, family, friends, and lots of good food!
Just living is not enough. One must have sunshine, freedom, and a little flower.
