One of the things I love most about my Vitamix is its ability to blend smooth dressings and sauces full of complex flavors. It takes just a few minutes to gather the ingredients and about thirty seconds to blend them into something delicious, like this Mango Lime Chipotle Sauce.

This mango lime chipotle goodness can be used as a dressing for Mexican or southwestern style salads as well as a sauce for tacos, rice bowls, grilled fish or meat, etc. I even caught a teenager in my house eating it right off the spoon.
Mango Lime Chipotle Sauce/Dressing
3 tablespoons fresh lime juice
1 half mango (any variety, I used the “champagne” ones from Costco)
1 – 2 tablespoons chipotle in adobo sauce
1 cup Greek yogurt or sour cream
1/2 cup milk
1/2 teaspoon salt
1 teaspoon dried cilantro or 2 tablespoons chopped fresh cilantro
Gather your ingredients. Juice the limes and cut the mango (refrigerate the remaining half for later use).
Place the lime juice and mango in a Vitamix or other high-speed blender. Add the chipotle in adobo sauce, making sure to get one or two of the peppers along with the sauce; use more or less depending on how spicy you want the sauce.
Add Greek yogurt or sour cream, milk, salt, and cilantro. Blend until smooth. Taste it and add more salt or heat if needed.
Top your tacos, etc., or dress your salad! Keep refrigerated for 3 – 5 days.
