Here’s a quick post with a quick recipe and quick dinner idea because, I don’t know about you, but the last week of school is upon us and ain’t nobody got much time to cook. And yes, this would even be quicker if you purchased your own tartar sauce but if you are as anti-mayo as I am, that’s simply not an option.
Of course, most people aren’t, but this recipe also allows you to skip the frequently added high fructose corn syrup, modified food starch, artificial flavors and preservatives that we should all be avoiding when we can, so give it a try! You can even use mayo in place of the yogurt/sour cream, I won’t tell.
This tartar sauce would be great with any kind of fish, but this particular quick dinner was a salmon burger. I like to buy the frozen ones at Costco and throw them on the grill. Add a brioche bun, fresh tomato, some arugula and this yummy sauce and you’ve got a delicious, healthy dinner that should please your busy family.
No-Mayo Tartar Sauce
(makes about 1 1/4 cups)
1 cup Greek yogurt or sour cream (or 1/2 cup each)
1 TB Dijon mustard
1 tsp prepared horseradish (jarred)
1 tsp dried dill or 1 TB fresh dill
1/2 tsp kosher salt
freshly ground pepper, to your taste
2 TB fresh lemon juice
1/4 cup chopped garlic dill pickles (or dill pickle relish)
2 TB chopped chives or green onion
In a small-medium work bowl, combine the yogurt/sour cream, mustard, horseradish, dill, salt and pepper.
and add both to the yogurt/sour cream mixture.
You’re done. Serve right away or refrigerate for up to 3 days. Enjoy!
