Here’s the second and final Meyer lemon recipe for the week. I’m feeling like quite the overachiever. I’m going to keep this short and sweet. But not too sweet.

To make this a lower-sugar Meyer lemon loaf, I replaced half the regular sugar in the batter with monk fruit sweetener. It worked so well that I might go for two-thirds next time. Anytime I can reduce the sugar load without sacrificing taste, I am a happy girl.

You may certainly use regular lemons for this recipe. I might reduce the amount of lemon juice a bit (then again I might not). It depends on how much tartness you like.
Low Sugar Meyer Lemon Loaf
(makes one 8 x 4 inch loaf)
CAKE
1/2 cup butter. soft
1/2 cup granulated sugar
1/2 cup granulated monk fruit sweetener
2 eggs
1/4 cup Meyer lemon juice
1 teaspoon zest
1 teaspoon vanilla extract
1/2 cup milk
1 1/2 cups flour
1 teaspoon baking powder
1/2 teaspoon salt
ICING
2 tablespoons butter, soft
1 cup powdered sugar
1 tablespoon Meyer lemon juice
1 tablespoon vanilla extract
milk or cream (if needed)
Preheat oven to 350 degrees F.
Zest and juice the Meyer lemons (I used two and had some juice leftover). Measure the 1/2 cup milk in a one-cup pyrex or another glass vessel then add the M. lemon juice. The acidity will cause the milk to thicken and curdle like buttermilk. Add the zest and the vanilla extract and set aside.




Using electric beaters or a wire whisk, beat together the butter, sugar, and monk fruit sweetener. Add eggs, one at a time, and beat until smooth and creamy.


In a separate bowl, stir together the flour, baking powder, and salt.


Add one-half of the flour mixture to the butter mixture, then add the milk mixture, then the remaining flour mixture, stirring or beating after each addition until the batter is smooth.


Coat a loaf pan with cooking spray, then pour in the batter, making sure it is evenly spread.
Bake in preheated 350 degree F oven for 40 – 50 minutes, or until a toothpick or sharp knife comes out clean from the center. Don’t worry if the top and edges are a little dark, as long as they aren’t burnt, it’s important to not under-bake the loaf. The baking time will vary depending on your oven.


Allow the baked loaf to cool for about 10 minutes before turning it onto a rack or another flat surface to cool completely.
ICING
Place the 2T butter (make sure it’s very soft, but not melted), powdered sugar, lemon juice, and vanilla extract in a mixing bowl. Whisk together, slowly at first, then more briskly, until the icing comes together and fluffs up a bit. If you find you need more liquid, add a tablespoon of milk or cream.
Frost and slice. Enjoy!
