Oatmeal Chocolate Chip Cookies

My oatmeal chocolate chip cookie recipe is a slightly tweaked version of the one provided on the Quaker Oats box. I add in a little more butter and vanilla, and I substitute coconut sugar for white sugar, so the cookies are not quite as sweet but have fantastic flavor and texture. They are more crisp than chewy in a really good way. It’s how I like them.

Sometimes I substitute regular-sized semi-sweet chocolate chips with the larger Ghiradelli 60% chocolate buttons. A friend once asked me why the cookies were so good. That was why. Along with the addition of extra butter, of course.

Oatmeal Chocolate Chip Cookies

(makes about 4 dozen cookies)

1/2 cup coconut sugar (sub white sugar)

3/4 cup brown sugar

1 cup butter, softened

2 eggs

2 teaspoons pure vanilla extract

1 1/2 cups flour

1 teaspoon baking soda

3/4 teaspoon sea salt or kosher salt

3 cups old-fashioned rolled oats (not instant)

12 ounces semi-sweet chocolate chips (about 2 cups)

Preheat oven to 350 degrees F.

Gather your ingredients.

Mix together the sugars and soft butter with an electric or stand mixer until creamy and fluffy.

Add eggs, one at a time, then the vanilla extract. Mix well after each addition.

In a separate small bowl, mix together the flour, baking soda, and salt. Add the mixture to the batter and mix until just combined.

Mix in the oatmeal and chocolate chips until combined.

Line cookie sheets with parchment paper or leave them bare (ungreased). Scoop out cookie dough into balls, 1 1/2 – 2 inch (approximately) in diameter. I use a mini ice cream scoop which works well.

You can refrigerate extra batter to bake fresh cookies on demand!

Bake in preheated oven for 10 -14 minutes; time will vary depending on the size, your oven, and whether or not they’ve been chilled.

Remove the cookies from the pan and allow them to cool long enough so they don’t burn your mouth.

Store cooled baked cookies in an airtight container.
