Sweet Potato Gnocchi with Brown Butter, Sage, and Ricotta

A couple weeks ago, I made this gnocchi for my cooking club friends and it was a huge hit, which is saying something because we are pretty frank and honest as a group. I’d never made it before so I found a recipe on Epicurious.com, tweaked it ever so slightly (For example, I didn’t see a need to add brown sugar to the already sweet potatoes) and was pleased to find they were leaps and bounds better than the tough, doughy store-bought gnocchi I had recently purchased. The effort paid off.  Continue reading “Sweet Potato Gnocchi with Brown Butter, Sage, and Ricotta” →

Pappardelle with Spring Vegetable Marinara and Fresh Basil

Pappardelle with Spring Vegetable Marinara
I know this looks like a lot of ingredients but I promise you this came together in under an hour, and that includes me stopping to take photos. You don’t have to do that. It was actually really fun because I remembered to turn music on in the kitchen. I’m not sure why it’s hard for me to remember that! Music makes everything better. sausage stuffing

Dad’s Sausage Stuffing/Dressing

This is the sausage stuffing I remember from childhood. Lacking an actual recipe, I’ve had to go by my taste memory to get it right, or at least close to what my dad made. It was always my second favorite part of the meal, right behind chocolate cream pie. I had to be careful though because this was not the only kind of stuffing on the Thanksgiving table and on more than one sad occasion I found myself biting into the dreaded oyster stuffing my father was so proud of. I’m sure it was excellent if you like that sort of thing but I won’t be attempting to recreate that one. Ever.

Slow Cooked Chicken Ragu with Pappardelle

Second grade is in full swing and this family couldn’t be happier! Well, one of the seven year olds could be happier but that would just go against her contrary nature so really, all is right with the world. Summer was super but I can only take so much fun and leisure time and, to be honest,  keeping two girls occupied and entertained isn’t my strong suit. Homeschooling would be disastrous for us. So, we had a good time, made some happy memories and now it’s time to get back in to a routine that, thankfully, the school has set for us.

pumpkin nutmeg dinner rolls

Pumpkin Nutmeg Dinner Rolls

I’d like to say a word in defense of pre-Thanksgiving mall Santa’s and all that pesky, premature holiday cheer that seems to be making everyone very grumpy this year. There is less than a month between Thanksgiving and Christmas in 2013. Only four weekends. A measly twenty-seven days!!! If you’re a retailer, that is not enough time to make a holiday buck. I know you all want to boost the economy, so, I would humbly suggest you stop your complaining and get busy because you are likely the same people who, the week after Thanksgiving, will be complaining that you have no time to prepare. Take a breath, try not to take it so personally, and start humming along. And please try to remember, places like Costco have Christmas decorations up in October (or way earlier). Every. Single. Year. For like, the last twenty years. So maybe we should all just try to accept that and stop being so amazed and indignant every time we notice it. I’m not talking to you true Grinches out there. You can keep your bah humbug as long as you keep it away from me. I’m talking to those of you who actually enjoy the holidays (I know you’re out there). Enjoy them already! It will be the new year before we know it.

mac and cheese

Weeknight Mac and Cheese

Below is a picture of my goofy girls at Central Oregon Pumpkin Co., with Smith Rock State Park in the background. After more than ten years, I am still in total awe of where I live. Every season brings its own spectacular beauty. It was a perfect fall weekend, complete with good friends, pony rides, getting lost in a corn maze, caramel apples, a festival downtown and long walks with the dogs!

cinnamon rolls

Grandma’s Cinnamon Rolls

Mother’s Day brunch always reminds me of my mom but for reasons you probably wouldn’t expect. You see, we served brunch at the restaurant and Mother’s Day was always the busiest Sunday of the year. My mom, who was often doing host duty (she worked 50 – 60 hours a week on her feet until the restaurant closed when she was 68) would see families, in her words, “parade” their elderly mothers out of the nursing homes and in to the restaurant. Now, I’m sure most of these ladies were actually having a wonderful time, happy to be out to a nice meal with their loved ones but my mom thought it was horrifying. She would tell us every year, in no uncertain terms, that if she ever became to old to care for herself we were to put her in a “home” and leave her there! We would just sort of laugh and say yeah right, okay mom, whatever. We knew she meant it though and, although I would rather had many more years with my mom, she did not want to be an old person who was unable to care for herself, and she wasn’t. Dignity was of utmost importance to her. She was diagnosed with breast cancer when she was 69 and passed less than a year later. I miss her every day and I could go on and on about how great she was but I’m starting to get a little teary so I’ll move on…

no-boil lasagne

Easy No-Boil Lasagne

I recently got to spend a weekend with some of my favorite people in the world and I was very happy to take them this lasagne to share. They were pretty happy about it too… Who doesn’t love lasagne?! My friend told me it may have been my best version yet so I promised her I’d share it here and show her just how simple this recipe is to make. With my multiples group, I participate in taking meals to families with newborn twins and triplets and this is one of my main go-tos. A lot of people sort of avoid it and try to  come up with less common dishes but I tend to embrace it. It’s cliche for a reason – it’s such great comfort food! I always try to keep from overindulging by serving a reasonable portion with an extra large serving of green salad. It doesn’t always work but it helps.
