Jump to Crispy Energy Bites Recipe
You’re gonna want to try these Crispy Energy Bites. They are so simple and satisfying, I can’t believe I haven’t been making them for ages. I first discovered several different energy bite recipes when I was helping my friend with a fundraiser for Girls on the Run and needed some easy, healthy snack ideas that I could make with the young girls who were attending. These were the perfect thing because all they require are a few key ingredients, a bowl, and a mixing spoon. No stove or oven! Frankly, measuring cups are optional once you get the general hang of it.
You can use sunflower seed butter or any nut butter you want and add dried fruit, nuts, etc., whatever your little heart desires. Butterscotch chips are quite a delicious addition, in my opinion, but my girls disagree, so we keep it simple with plain old chocolate. The thing that makes these a little different than most recipes I’ve seen is the addition of the crisp rice cereal. I love the extra crunch! So, if you have ten minutes, go ahead and raid your pantry, put these together, have a tasty, reasonably healthy treat for your family, and get on with your day! Or better yet, have your kids put them together…
Crispy Energy Bites
(makes 16 – 20 bites, feel free to double or triple the recipe)
1/2 cup old fashioned oats
1/2 cup crisp rice cereal
1/3 cup unsweetened, shredded coconut
1/4 cup ground flax meal (optional, you could also use chia seeds for some added fiber & protein, I like the texture of the flax meal though)
pinch of salt
pinch of salt
1/2 cup nut butter or sunflower seed butter
1/3 cup honey
1/2 cup chocolate chips/dried fruit/butterscotch chips/nuts/etc.
Gather your ingredients (this is the hardest part).
Place oats, crisp rice cereal, coconut, flax meal and salt in a large mixing bowl.
Add nut/seed butter and honey, stir gently until combined.
With your fingers (making sure hands are well washed), gently mix in additions such as chocolate chips, careful not to completely crush the crisp rice cereal. It helps to dampen your fingers with water before you work with the sticky mixture.
Roll in @ 18 bite size balls.
Place on parchment paper (not completely necessary, you could just use a plate) and refrigerate until firm. Or don’t refrigerate and eat them right away. It’s really your call but I do think the texture is improved by chilling them a bit. That’s it, you’re done!
